JUMPING JACKFRUIT (or Sweet Potato) BBQ SLIDERS + COOL, CRUNCHY, COLORFUL COLESLAW + TOTALLY TROPICAL FRUIT SMOOTHIES!

We are BEYOND excited to introduce this week’s Surprise Ingredient to all of our Young Sticky Fingers Chefs: JACKFRUIT!

Jackfruit is a gigantic fruit found widely in South East Asia-and we started noticing it in grocery stores within the past year. Vegetarians and vegans love it for its texture, which resembles meat, and its adaptability to so many flavors. Unripe jackfruit is used in place of pork, chicken, beef, even fish for things like fish sticks. We were amazed to learn this in our Sticky Fingers Cooking test kitchen and thought it’d be super fun to incorporate into an Americana theme of BBQ this week to our students.

If you can’t find jackfruit in your regular supermarket, don’t despair. We’ve seen it in some Whole Foods and Trader Joe’s stores, and it can also be ordered on Amazon. We’ve also provided a substitution to jackfruit if it’s hard for you to find: Sweet Potatoes! Kids will shred their jackfruit by hand or Sweet Potatoes with your graters this week. They’ll also shred or slice veggies for a coleslaw to stuff their sliders with, and top it all off with tropical fruit smoothies. Can you tell we’re craving warmer temperatures, sun, and backyard BBQs?!
